New doctor performed annual checkup and found high iron levels, and sent me to get checked by a hemotologist; sure enough, I had hemochromatosis.

My question to you and your sister is, "did you all not have annual checkups to include blood tests??" Why weren't you aware of high iron levels years and years before the symptoms began?? I ask because even though I had annual checkups, the doctor never did anything about the high iron levels until I changed doctors, and didn't know if that may have been your case as well.
